Chicken Pot Pie

This is one of my favorite go-to recipes. It's a quick and easy meal.
Ingredients:
Pie crust
Canned Chicken
1 can Veg-all
1 can Cream of Chicken

Preheat oven to 350 degrees.
Drain chicken, mix with cream of chicken and Veg-all, pour in pie crust.
Bake for 30 minutes, then serve.
Enjoy.

Roasted Chicken with Vegetables

This has become one of my new-found favorite recipes!! I happened to catch a glimpse of Martha Stewart on the Today show and she was talking about one-skillet meals. She didn't make or even describe this recipe, but the recipe she was talking about gave me the idea for this. I hope you enjoy it! It's so wholesome and hits all the right spots. :)

Ingredients:
1 pkg Bone in Chicken Thighs
1 T. Extra Virgin Olive Oil
Chicken Stock/Broth
3-4 Potatoes, halved with Skins
3-4 Carrots, sliced
1 Onion, quartered
3-4 Garlic Cloves, smashed and peeled
Salt, Pepper, Basil, Bay Leaves, Thyme, Italian Seasoning

In a cast-iron skillet swirl in oil. Add chicken skin side down and cook for about 5 minutes.
Add chicken broth/stock (whichever you have on hand). Then add vegetables. Bring to a boil. Transfer skillet to oven and bake for 30-45 minutes until done.
Enjoy.

Chicken Alfredo Lasagna

I'm a HUGE fan of Italian food, but I've just recently (like since I had Olivia) have become a big fan of alfredo! I used to loathe the stuff, but now I absolutely love it and when I came across this recipe I decided I had to try it.
The ingredients:
1 pkg. Oven Ready Lasagna
1 jar Alfredo Sauce
1 sm. jar of Ricotta Cheese
1 sm. pkg. Cottage Cheese
1 pkg Frozen Spinach or 1 can Cut Leaf Spinach, cooked
3-4 cooked Chicken Breasts, diced

Preheat oven to 350 degrees.
In 2 seperate bowls mix spinach, cottage cheese & ricotta cheese, in another bowl mix alfredo sauce and diced chicken breast.
In a 9x13 dish arrange lasagna noodles.
Spread ricotta & spinach mixture, then top with Mozerella cheese. (Sorry I accidentally left out the mozerella in my picture of the ingredients).
Arrange another layer of lasagna, then add the chicken and alfredo mixture.
Arrange another layer of lasagna.
Add mozerella and parmesean cheese (sorry again, I know I left out the Parmesean in the picture too... it's been a crazy day).
Bake 50 to 60 minutes until top is brown and bubbly.

Tater Tot Casserole

Yes, you read that right, Tater Tot Casserole. I happened to stumble across a Duggar's episode and they were making this recipe. I figured since they have so many kids and all of their kids seemed to enjoy it, I might as well give it a try. I found the recipe on their website.
 
Duggar's Tater Tot Casserole
2 lb ground turkey cooked, seasoned, drained
3 2lb bags tater tots
2 cans cream of mushroom
2 cans evaporated milk
2 cans cream of chicken
Brown meat & place in large casserole dish.
Cover with tater tots. Mix soup & milk together.
Pour over top. Bake at 350 for 1 Hour.
Makes 2- 9”X13” pans
 
I cut the recipe in half and it still made quite a bit. I split it and made two casseroles. :)

Sorry I didn't get a picture of the finished product, but let me tell you, it is REALLY good. It's definitely a must try!! It's also a good make ahead and freeze meal.
